Banana Nachos


Banana nachos

Nachos don’t only come in form of salty corny triangles but even sweet and crunchy with a taste of banana! You will need to pop a mixture of following ingredients into your dehydrator:

  • 4 cups of thawed bananas (without the water)

  • 2 cups almond pulp

  • Pinch of vanilla bean

I started this nacho experiment because of necessity. I desperately needed to use a bunch of nanas that were blocking my freezer space. So I let them thaw couple of hours in the fridge, releasing the moisture out, I discarded the water and threw in the nanas into my blender together with almond pulp and a pinch of vanilla bean. Almond pulp is leftovers from making almond milk which I also usually freeze in and use for diverse dehydrator creations. I then blended all the ingredients and formed two large pancakes on my teflex dehydrator sheets. They were rather thick to start with. I dehydrated them overnight on living foods function, flipping them in the morning to let them dehydrate on the other side for another 6 hours. Voila out came beautiful crunchy pancakes that I then cut into nacho shaped triangles. I served them with wild blueberries/raisin mix and fresh strawberries and coconut cream.
