Raw Shortbread Cookies

Dough dough dough comes with love and:
1 cup rolled oats
1 cup pitted medjool dates
1 cup almond pulp (rests from making almond mylk)
1/2 cup water
Jam:
2 cups fresh or frozen raspberries
2 medjool dates
bit of water to blend
Start by blending all the dough ingredients. Best for this job is a good processor but if you don’t have one, you can even use a high speed blender on a slow speed while using the tamper. It’s a sticky business. Once done, take a dehydrator tray and form round cookies the size about half of your palm. Proceed by making your jam, using as little water as possible (if any). You want your jam to be thick and creamy. Put a spoon full on each cookie and dehydrate on living foods temp for about 4-6 hours. Enjoy!
