Broccoli Avocado Salad Bowl

Get your greens on:

  • Romaine lettuce salad leaves

  • Spinach leaves

  • 1 medium broccoli head

  • 1 large avocado

  • 1 cup cherry tomatoes

  • 1 cup edamame beans

Mustard sauce:

  • 1 cup raw cashews soaked overnight

  • 1 tsp yellow mustard powder

  • 1-2 tbsp maple sirup depending on how sweet you like it

  • juice of half lemon

  • bit of water to blend

Chop all your veggies except of edamame beans and transfer all into your favourite bowl. Prepare your sauce by blending all the ingredients in a high speed blender, adding water last to keep it smooth and not too runny. Click a bit of your sauce onto the salad and enjoy!
