Creamy Sushi

Sushi lovers here we go:

  • 3 nori sheets

  • 1/2 pineapple

  • 1 cucumber

  • 1 red bell pepper

  • cashew cheese

  • medium cauliflower

  • fresh ginger

  • rice vinegar

  • tamari or soy sauce

Raw aioli for the creaminess:

  • 2 heaping tbsps white tahini

  • 4 garlic cloves

  • 1/2 cup water or more

If you want the full experience, prepare a day ahead by cutting thin slices of ginger. Best man for the job is a mandolin in this case since it is crucial for your slices to be as thin as possible. You can also use vegetable peal. Soak your ginger slices in rice vinegar overnight and keep it cool in the fridge.

Next day start by mixing all the ingredients for your raw aioli sauce. Crush the garlic, mix it with tahini and add as much water as you like. The more water you add, the thinner it gets. Let it cool in the fridge while preparing the sushi.

In a food processor, cut your cauliflower to small rice-size pieces then add one tablespoon of rice vinegar. Cut your bell pepper, pineapple, cucumber and cashew cheese into thin slices. Take out your nori sheets and spread a bit of your aioli first, followed by a layer of cauliflower rice. Then continue with your vegetable and fruit and cheese slices, roll and cut. Sprinkle some tamari or soy sauce and serve with ginger slices and extra aioli on side. Enjoy!
