Green Lasagna

Great and easy recipe that tastes amazing! You do not need to worry about making zillions of sauces and layers, just a few suffice to achieve the ultimate oil free lasagna!

Ingredients:

  • nori sheets

  • 2 cups sprouted quinoa

  • 1 cup spinach pesto

  • 1 large avocado

  • 1 cucumber

  • 1 green bell pepper

  • Romaine lettuce leaves

  • 1 cup mung bean sprouts

  • 1/2 cup broccoli sprouts

Start planing a few days ahead. You need to sprout quinoa so take 1/2 cup of quinoa and soak it overnight in approximately 2 cups of water. In the morning, transfer the quinoa to a sprouting jar and let it sprout for at least 24 hours. Your quinoa is ready when it has small tails growing.

Spinach pesto... For spinach pesto, you will need 3 cups of frozen spinach, 1/2 cup of pine nuts, 1/2 cup sunflower seeds, 1 lemon juiced, 2 large garlic cloves and some water to blend. blend all the ingredients in a high speed blender and use approximately 1 cup for the lasagna. Keep the rest in an air tight container in the fridge. It will hold 4-5 days.

Now to preparing the lasagna. Layer a nori sheet, lettuce leaf, quinoa sprouts, avocado and paprika slices, spinach pesto, cucumber slices and mung bean sprouts, topping it with nori sheets, another layer of pesto and quinoa and finishing off with broccoli sprouts. You can make few extra layers if you like. Enjoy!
