It is apricots season and I just thought of how I used to LOVE my grandmas' apricots dumplings! We recreated the raw version of these and it did not disappoint!

Prepare some sweet ripe apricots and the following ingredients:

  • 2 cups coconut meat (or sub with coconut flakes)

  • 2 tbsps agave syrup

  • 3 tbsps psyllium husk

  • 1/2 tsp vanilla bean

  • 1/2 cup water

Blend all the ingredients except of psyllium husk in a high speed blender, add the husk at the end when all the other ingredients are well blended together. Roll the apricots in the dough and dehydrate for 4 hours if you wish the dumplings warm. Transfer to a plate and sprinkle with some goodness if you wish. I used cinnamon scented muscovado sugar. Enjoy!
