Salad with buckwheat dip

For the salad you will need:
mixed greens
cherry tomatoes
cucumber
zucchini
asparagus
edamame beans
red onion
red sweet pepper
Buckwheat dip:
1/2 cup sprouted buckwheat
3 tbsp tahini
1/2 zucchini
1/2 lemon juiced
1 garlic clove
1/2 red onion
1 tbsp dulse flakes
3-4 tbsps tamari sauce or coconut aminos
bit water for consistency
Start sprouting your buckwheat a day ahead. Soak the buckwheat for 15 mins and then let sprout overnight in a sprouting bag or cup. The longer you let it sprout the more nutrients you get. Start making the food by chopping and spiralizing your veggies. Continue by blending all your buckwheat dip ingredients in a high speed blender adding just a bit of water if needed to make it smooth. Transfer to a dipping cup and drizzle some tamari sauce over. Serve and enjoy!
